Carrot Ginger Soup
Ingredients:
One sweet onion
One yam or sweet potato
Large bag of carrots
Piece of Ginger (depending on how strong you want it)
One can of coconut milk
Turmeric (optional)
Salt and pepper to taste
Paprika powder and parsley for decoration
Cut up all ingredients.
You can either boil it, or put it in a slow-cooker. Add salt and/or pepper to taste.
Once cooked add the can of coconut milk, blend in a good blender like the Vitamix, which makes it nice and creamy.
Sprinkle some paprika and parsley on it, to make it look nice!
Ready to serve!
